How to make puff pastry
Ingredients
1 lb 2 Oz flour
1 lb 2 Oz butter
1/3 Oz salt
2 gallon of water
Method
Sieve the flour in a container and make well of the flour.
• Mix the dough gently with the right hand, add a pinch of salt and water as needed.
• Wrap the butter in the dough. Allow to stand for 30 minutes in a cool place.
• Roll out the dough into a long thin strip
• Fold the dough into three parts. Give it a half turn roll out and fold out once more. This complete the second turn.
• After the second turn, the dough is given four more single or two double turns. After each turn the dough must rest in a cool place but not on ice for 20 minutes.
• The finished puff pastry can be used for pastries or small pastries.
• The cut out round of pastry are placed on a baking sheet which has been slightly moistened with water. The outside edge is notched with the back of a knife and the lid marked and decorated with a pattern of lines etched in with the knife point. After the top has been brushed with yolk of egg, pastries are baked in a hot oven for 35 – 40 minutes.
